Spaghetti Napolitana


Spaghetti Napolitana

Serves 6 People


1 Onion finely diced
1 tbsp Olive Oil
1 Punnet of Cherry Tomatoes
10 halved and pitted Kalamata Olives
250g Spaghetti Pasta
1 Jar Tomato Pasta Sauce
½ Bunch Fresh Basil
150g Mozzarella Cheese


In a pot of boiling, salted water, cook pasta.
Heat oil in a frying pan.
Chop onions finely. Add onions and fry until fragrant.
Slice cherry tomatoes in halves. Add the tomatoes to the pan and fry until blistered.
Add tomato pasta sauce and bring to the boil. Reduce to a simmer and cook for five to ten minutes.
Tear basil leaves into the sauce.
When the pasta is cooked, add pasta to sauce.
Serve with grated mozzarella cheese.
