Cuisinart's Traditional Hot Cross Bun Recipe!

 

Dough

- 3 1/4 cups of strong flour (bread and pizza flour)

- 1 cup sultanas or choc chips

- 2 tbsp mixed peel (orange and lemon)

- 2 tbsp caster sugar

- 1 sachet dried yeast

- 1 tsp mixed spice 

- 1 tsp ground nutmeg 

- 1 pinch of salt

- 1 cup milk (warmed but not hot!)

- 50g butter (melted, cooled to room temperature)

- 1 egg  (lightly whisked)

Piped Crosses

- 1/4 cup strong flour

- 2 tbsp water

Glaze

- 1/3 cup caster sugar

- 1/3 cold water

 

1. Brush a baking tray with melted butter.

2. Combine all dry ingredients in a large bowl. Stir to combine. Make a well in the centre. Add all wet ingredients. Use a wooden spoon to stir until just combined.

3. Use your hands to bring the dough together in the bowl. Turn the dough onto a well-floured surface. Knead for 15 minutes .
Brush a large bowl with melted butter.

4. Place dough in the bowl. Turn to coat. Cover and set aside in a warm place to prove for 1 1 /2 hours or until doubled in size.

5. Preheat oven to 180C fan forced. Punch down dough to release excess air. Knead by hand for 5 minutes. Divide into 12 balls. Place in baking dish.

6. Set aside in a warm place for 30 minutes.

7. For the crosses, combine flour and water in a bowl. Transfer to a piping bag fitted with a small circle nozzle. Pipe lines on buns to form crosses. Bake for 20 minutes or until golden and hollow when tapped.

8. For the glaze, place sugar and water in a saucepan over medium heat. Cook and stir for 3 minutes or until sugar dissolves and mixture thickens. Brush the tops of the warm buns with the glaze.
